EML is the standard file format for a single email message. The format is defined by RFC 822 (1982), updated by RFC 2822 (2001) and RFC 5322 (2008). An EML is plain text on the outside, structured as:

Email is critical evidence in litigation, but courts and law firms work in PDF, not EML. PDFs preserve the headers and content as a fixed-layout, immutable record — which is exactly what evidence handling requires. Incident response, internal investigations, and HR cases sometimes require capturing email in a way that proves it hasn't been edited.
